Meal Plans: The Good, The Bad, The Ugly...

This week has been less than stellar with my meal plan.  One meal was "meh"  - you know, like it's not ever going to be a love relationship there.  The other started off great until A.J. spied a pocket of cream cheese.  The initial enthusiasm for the meal took a nosedive followed by the polite, "You don't have to make that one again" comment.  It has been a long time since we've had this many meals that have been scored so low, it was beginning to be a little demoralizing.  But today we got back on track in a really big way with a really simple dish that we all really enjoyed - score! It's so good, I'm going to share it (and of course Cooking Light deserves the credit for the recipe).  It's a snap to make, and is now my favorite egg dish!  Make this for dinner or brunch one day with a nice salad or fresh fruit - I think you'll enjoy it.
Cajun Quiche in a Rice Crust 
(I just served with fresh fruit & extra sausage for the manly meat eaters!)


Crust:
2 c cooked & cooled long grain rice
mix in 1 tsp each of garlic powder & onion powder, 1/2 tsp salt, and one egg.  Spread evenly in to a 9-inch pie plate coated with cooking spray.  Layer 1/4 c shredded sharp cheddar on top.


Filling:
1/2 c each of chopped celery, red bell pepper, and onion 
saute along with 2/3 c andouille sausage or kielbasa and 1 tsp bottled minced garlic, for 5 minutes, then spoon evenly over rice crust.  
Combine 3/4 c egg substitute, 2 egg whites, 1/4 c fat free plain yogurt, 1/4 tsp each of salt and Tobasco.  Stir with a whisk until well-blended, then pour over sausage mixture.  Top with 1/4 c shredded sharp cheddar.


Pop it in to a 375 degree oven for 30 minutes (or until egg is set), then let it stand for 5 minutes.


Note: I also added about 1/2 c of sun-dried tomatoes per recipe reviewer's suggestion, and it was a great touch.

Sounds and looks good. I would love to try to make it but neither Phillip or Cason will eat anything with onions or bell peppers in it. It really limits my recipe choices!
